Lamb/Chicken/Soya Curry
Well this is a primarily a non- vegetarian recipe..but since i do not prefer cooking non-vegetarian food at home, i use soya chunks which readily substitutes to all meaty recipes and definitely tastes goood if not better. BTW i do relish white meat and have fair amount of it when I am out.So all those who dislike or have a major aversion to either or all of these may subsitute with veggies. Alright, lets get down to business then...
What you need?
Soya Chunks- 1-2 cups
Green Bell Pepper - 1
Canned Tomato Sauce - 1 or Tomatoes -2

Turmeric powder- 1/2 tsp
Coriander powder- 2 tbsp
Cumin/Jeera powder- 1tsp
Garlic paste- 1tbsp
Ginger paste- 1tbsp
Olive oil- 3 tbsp
Salt to taste
What next?
Boil 5 cups of water , add salt and soya chunks.cook for 5-7 min or until the chunks are soft and edible. strain the waster and keep aside.
1. In a pressure cooker , add oil and saute onions till light brown. Add the salt for faster cooking.
2. Thrown in the Garlic, ginger paste, chilli powder, turmeric, coriander and cumin powder and 1 cup of water and fry till oil separates.
3. Pour in the tomato puree and a cup of water and fry till u see water evaporated.
4. Add in the boiled soya chunks, diced potatoes, bell pepper and saute for 2 min and then add 1-2 cups of water depending on how thick you want the gravy and then pressure cook.

Tamatar Wangun/ Tomtoes and Eggplant mash
Well i was glancing through one of the non- cooking forums and chanced upon this awesome looking and simple Kashmiri dish. It is pretty simple to make and yet tasty. i have not followed 100% of the recipe and have modified slighly to adhere to my requirements.
What you need?
Eggplant - 1/2 or 5-6 small ones
Tomatoes- 2 big
Fennel powder- 1 tbsp
Deggi Mirch/Kashmiri Mirch/ Cayenne pepper powder- 1/2 tbsp
Olive oil- 2 tbsp
Salt to taste
What next?
1. Spray some pam olive oil onto a baking tray and spread the eggplant. Bake it for 10-13 min on 325 degree in the oven. Alternatively you can even deep fry it..well like i said have made some changes to suit a healthy life.
2. In a pan , pour 2 tbsp of olive oil, add the chopped tomatoes,Chilli/cayenne powder, salt and 1/2 cup of water and cook till they become mushy.
3. Add the fennel powder..cook for 2 min and then the egg plants.
4. Close the lid and cook for another 6-7 min
5. Squish the eggplants if you like it..well it certainly tends to mix well that way.
6. open and cook for another 2 min.
Serve with hot rice or or rotis..
